Healing Soup


Hello Friends,

For this entire week, my family has been suffering from a powerful mystery stomach illness that has caused plenty of upset tummies, changed sheets, clean-ups and long nights in the bathroom. We're all on the mend now, but our tummies are still quite sensitive. So I decided to make something really simple and filling for dinner since we all have somewhat of an appetite back. It's basically a chicken and rice based soup, but I call it Healing Soup as it did the trick! We felt better, had more energy then we had before and it didn't make our bellies unhappy. Here's the recipe!

Ingredients

- Chicken (or scrambled egg if you just can't stomach anything very meaty.)

- Rice

- Frozen Mixed Veggies

- Chicken Stock

-Salt (To taste..but not too much)

-Pepper (To taste...as much you like)

-Spices (Whatever kind you like to taste)

Directions

-Start cooking your rice in your rice cooker or on the stove top following packaging instructions.

-Dice your chicken into small pieces and saute in a pan with some olive oil until cooked through and done. Or crack a couple of eggs and scramble how you like, breaking it into bite-sized pieces. Be sure to season accordingly along the way.

-Throw in your frozen veggies, season some more, and cook until warmed through and no longer frozen.

- Add one box of chicken stock to the pot, and add more seasonings until you get the desired flavor. Let it come to a small boil and then turn the temperature down to a low simmer. Simmer for ten minutes and then turn the heat off.

- Your rice should be done by now, so spoon a big ladle-full into a bowl then spoon your soup on top of it.

*Tips*

- This recipe is completely customizable! Use whatever frozen veggies you have on hand, and whatever seasonings you like! You can also increase the number of servings very easily.
